The purpose of both the International Society and the Baltimore Branch is to increase the knowledge and appreciation of the arts of the table. André Simon stated the “object of the Society is to bring together and serve all who believe that a right understanding of good food and wine is an essential part of personal commitment and health, and that an intelligent approach to the pleasures and problems of the table offers far greater rewards than the mere satisfaction of appetite.”

The Articles of Incorporation of the Baltimore Branch state its purposes are:

"To assist its members and friends in pursuit of the development of the knowledge and the enjoyment of good food and wine leavened by good fellowship" and

"To develop a society, not of gourmands anymore than a society of wine snobs, but of civilized [persons] of good taste who look upon wine as a fair way between the out-of-bounds of alcoholism and prohibition as well as the best partner of their daily food; to gather members who believe in moderation and hate excess as much as any kind of ostentation, and who do not ask for much but what is best, not dearest or rarest, but something genuine, of really fine quality."
